They roam free in the Dehesa, or acorn woods, and enjoy four months of an acorn-rich diet during the Montanera, or acorn season. This gives the meat a wonderfully rich and sweet, nuttiness that is further enhanced through spending a minimum of 42 months in the drying cellars. In 2014 this bellota caused a stir when it was awarded a Golden Fork by the Guild of Fine Foods in the Best Charcuterie Product of the Year category. This ham is found in some of the best Michelin kitchens, and now it can be found in yours, too.
