The Story so far...
It all started when after feeling generally unwell for several years I was eventually diagnosed as being intolerant to wheat and dairy.
I cut out these food groups, and began to feel much better but I found it very difficult to stick to such a restricted diet. I missed eating all the things that were wheat based such as bread, pasta, cakes and biscuits (odd thing for a fashion model I know, but true) and this was mainly because I found the products that were wheat, dairy and gluten free were...well pretty awful to be honest.
I had always loved cooking so I decided to leave modelling to take a diploma with Leith’s School of Food and Wine. It was great fun, but once again I found it really difficult to be making so many delicious foods that I was not supposed to eat.
I decided it must be possible to create great tasting products without using the 'normal ingredients' that everyone could enjoy. So my quest began to develop delicious biscuits and cakes that were free from wheat ,dairy and gluten. After hundreds of attempts I started selling my range at the local farmers market. Customers really enjoyed them and kept coming back for more and soon I found I couldn’t make enough to meet the demand.
So the decision was made to take Against the Grain out of the kitchen and on to a commercial scale.
After meeting with many bakeries, Island Bakery Organics was exactly what I was looking for, being renowned for their delicious organic biscuits and natural approach. I was now confident that the taste, texture and home-made appearance that I worked so hard to achieve would still be retained in the finished product.
We launched our range of biscuits in September 2004 and you can now find them in foods halls, delis, and health food shops around the country and, as they say, the rest is history...but with plans to launch new products sometime in the future I had better get back to the kitchen.
