  • Cashel Blue was the first blue farmhouse cheese made in Ireland by the Grubb family in 1984
  • Tipperary using milk from their own herd of cows
  • Eaten at around three months the cheese has a rich, full and well rounded flavour developing greater creaminess as it matures up to 6 months
  • After maturing the firm, moist, creamy cheese is mottled with blue marble-like veining
