Fontina DOP, +/-2kg

£62.95

  • This cheese is a DOP product
  • If you are feeling adventurous why not try your hands at a traditional fontina fondue, a dish called fonduta alla valdonstana, which is a mixture of fontina, milk, eggs and truffles
  • DOP stands for Denominazione di Origine Protetta
  • It has a pronounced earthy and rather mushroomy flavour and goes well with truffles and roast meats
  • It is the Italian term for the EU system of Protected Designation of Origin, which encompasses the laws that protect the names of speciality food products with a specific geographic origin
  • Although fontina is made throughout the year, the best cheese is obtained during the summer when the cows are moved to an altitude of 1,800 to 2,300 metres and fed only with rich grass to give it a distinctive aroma
  • It has a golden brown rind with a pale yellow interior
  • Fontina is a semi-soft Italian cheese and has been made in the Aosta Valley in the Alps since the twelfth century
