  • Purple shiso is a herb traditionally used in Japanese cuisine. It is part of the mint family and has an aromatic citrus flavour similar to anise with a gentle astringency. Best eaten raw, they're delicious in salads or as a wrap for a tangy minced meat or fish ball. If you do decide to cook them, try dipping in tempura batter before deep frying. The zing of herby flavour bursts through the crunch of crisp batter in perfect balance.Green shiso is also available and it has a slightly fuller favour and more tender leaf. The purple variety is most commonly used to give a vivid red colour to the Japanese pickled plum dish, umeboshi.
